Ingredients
1 ½ kg pipis
500mL water
2 tbsp. oil
3 large cloves garlic roughly chopped
2 shallots cut 4cm long
1 handful coriander roughly chopped
1 tsp. sugar
2 tbsp. XO sauce
1 tbsp. corn flour mixed with 50mL water
¼ cup chicken stock
1 fresh red chilli thinly sliced
30g ginger thinly sliced
Process
Heat up the pot with 500mL of water and bring to a boil
Add pipis and cover for 3 to 4 minutes until pipis open up. Drain the pipis and discard the water
Heat up wok on high with oil and then add garlic and ginger. Once it starts to brown add XO sauce, oyster sauce, chicken stock and sugar and bring it to a boil
Add pipis, shallots and chilli and toss altogether. Pour in cornflour and water mixture to thicken
Sprinkle dish with coriander and serve
