Male Blueswimmer Crab
Males Blue swimmercrab have a blue shell, longer claws and on the underside of the body their flap is long and narrow.
Boil a large pot of boiling water, add a handful of rock salt or sea salt, place as many crabs as you can fit in the pot and boil until they start to float. Cooking usually takes about 8 minutes or so.
With their sweet, nutty flavour, and evenly textured, moist, firm flesh, blue swimmer crabs make superb eating.
The firm texture and delicate flavour of the blue swimmer crab make it excellent for serving with pasta. Either as a filling for tortellini and ravioli, or as the “meat” layer in a lasagne, blue swimmer makes a delicious addition.
