Leatherjacket
Inexpensive leather jackets are always a bargain. Leatherjackets are sold mainly as trunks (headed, gutted and skinned) and occasionally in fillet form (always skinned).
Because of their firm texture, leatherjackets are very good for Thai-style curry or a stir-fry. They are also excellent for fish balls as the flesh holds together very well.
A firm-textured fish with a light flavour; can be poached, steamed, baked or barbecued. When grilling or baking it is best prepared whole. Delicious served with lashings of lemon and cracked black pepper.
