Kina ( Sea Urchin Roe)
They’re the sections of the sea urchin that can be eaten. Take a spoon and carefully scrape out each one. Roe is another name for the gonads, albeit this isn’t exactly right since roe refers to a mass of eggs inside a fish, not the gonads. Remember that the gonads and none of the other edible portions of the urchin are found within the shell, so avoid eating anything else inside.
